After destemming, gently pressed. Following débourbage, fermented in stainless steel tanks with wild yeast for approximately two weeks at low temperature (below 18°C).
Maturation
2024 vintage: aged in stainless steel tanks for approximately 6 months. 2022 vintage: aged for approximately 29 months. Followed by racking, blending, and filtration.

Tasting from winery
Aromas of pear, loquat, and banana, along with fermentation-derived notes such as yogurt and ginjo-like aromatics, complemented by hints of clove spice. On the palate, a soft balance of sweetness and acidity is accompanied by a slight bitterness reminiscent of Japanese citrus peel. The finish is accented by subtle salinity and umami.
